This delicious recipe is one of Chef Victor’s specialties and is requested time and again by Residents of Elite Care at Fanno Creek.
1lb sushi grade Ahi tuna
4oz black & white sesame seeds
1oz olive oil
1 cup sour cream
1tsp lemon juice
2tbsp whole milk
Fennel sprigs for garnish
Heat oil on flat top grill. Cut and shape Ahi to desired shape (square) press each side of the tuna in the sesame seeds set aside. When the oil is hot, place the tuna on the grill and sear on all sides till about 1/4 inch is cooked leaving the center rare. Set aside to cool.
Mix the Sour Cream with the lemon Juice and add the milk to thin it out. Place the mixture in a pipping bag with a star tip.
Go back to the Ahi once it has cooled and with a sharp knife slice 1/4 inch pieces and arrange on a serving plate of your choice. Pipe the Creme Fresh onto the center of each slice of Ahi, then garnish with a sprig of Fennel.
